01The work
What this service covers
This is the clean most kitchens book, and it covers the part of the system that collects grease fastest: the hood canopy, the baffle filters behind it, and the accessible run of plenum above the cookline. We mask the line off first so nothing lands on your equipment, pull the filters out to be washed separately, and take a 4000 PSI pressure washer at up to 250 degrees to the metal until it is bare again.
Grease is fuel. A hood that has not been cleaned in a while is carrying a layer of it directly over an open flame, and it is the first thing a fire inspector looks at. The work is done to NFPA 96, the standard your kitchen is measured against, and we leave a certificate on the hood when we are finished so you can show what was done and when. We work around service — evenings, overnights, whatever keeps your doors open.

The kit for standard hood cleaning
The work runs off an EAZY KLEEN 4000 PSI washer. What changes from job to job is what comes out of the van with it.
For standard hood cleaning that’s the pressure washer, containment sheeting and photographs of the duct interior. The same van carries the written report too, so the kit gets picked to suit what’s actually over the line.
